We currently have four MOON wines - two whites and two reds.

Bottle of MOON ChardonnayCrisp natural acid, restrained fruit, a succession of rich savoury notes and textures, minimal oak, gentle tannins, long finish.

The fruit was picked early enough to retain leanness and elegance, but ripe enough to give a moderately full flavour and body to the wine.

Half the juice was fermented in old French barriques, allowing spontaneous fermentation by wild yeasts. It was then left in the fermentation barrels on yeast lees with occasional stirring for the best part of a year to build richness and complexity. The other half was fermented in tank to maximise freshness.

After racking from lees and combining the parts, the wine was allowed to clarify naturally before being gravity bottled with no fining or other treatments, under Diam corks. A small amount of sulphur was added at bottling. Alcohol is 13.5%.

Bottle of MOON MarsanneMarsanne is one of the principal white varieties grown in the Rhône Valley in France. It is not common in Australia, but there are significant plantings around Nagambie, where it thrives.

Marsanne normally makes a medium bodied lightly aromatic wine. In 2017 we picked the fruit very early giving a crisp and delicate wine with just 11% alcohol. Kept for 18 months on yeast lees, the wine is full of flavour and has developed excellent complexity and texture.

It was gravity bottled under Diam corks with no fining or treatments, other than a touch of Sulphur. As bottled, the wine had a very light haze which we could easily have removed by filtration, but we chose not to compromise the flavour with this additional processing step. The haze has now largely disappeared.

Bottle of MOON ShirazShiraz has a long history around Nagambie where it has been grown for over 150 years, although our vines are a mere 25 years old!

As with all our wines, our winemaking style emphasises the savoury notes and textures.

It was fermented by wild yeasts in an open fermenter, given plenty of time on skins, then basket pressed. The wine has spent 28 months in old French Barriques and some larger wood. It was gravity bottled under Diam corks without fining or filtration.

The wine is fully flavoured but not at all heavy, with a long succession of interesting flavours backed by firm but not aggressive tannins. Alcohol is 13.5%

Bottle of MOON Cabernet Sauvignon2011 was a cold wet year that left many Victorian producers in despair, however our healthy Biodynamic vines came through well, producing the usual small crop of intensely flavoured fruit.

A wild yeast ferment followed by 12 months in old French oak delivered a very lovely result. The wine has been further matured in tank before bottling, and it is now drinking nicely, with plenty of potential for further cellaring.

The wine is lighter than in warmer years, yet packed with delicious savoury flavours and silky smooth tannins. It is gentle enough to be matched to a much wider range of foods than most cabernets.

The wine was gravity bottled under Diam corks with no fining or treatments, other than a small addition of Sulphur. Alcohol is a modest 13.5%
